Makes one 13x9 pan
Ingredients
- 1 onion if you want
- 1 bunch chard or collards
- Salt
- 2 cups milk
- 1 bay leaf
- 1 lb pasta (the curlier the better)
- 8 tbsp (1 stick) butter
- 3 tbsp AP flour
- 1 cup each of 2 kinds of cheese (good cheeses to add: gouda, cheddar, goat cheese, gorgonzola, Havarti, cream cheese)
- 2 tsp mustard (liquid or powder)
- Freshly ground pepper
- 1/2 tsp paprika
- 1/2 tsp nutmeg if you want
- 1.5 cups bread crumbs (tear up part of a loaf and put it in a food processor, don't toast beforehand)
- 2 tbsp horseradish OR 1/4 cup parmesan depending on how you prefer your breadcrumbs
- Olive oil or veggie oil
Instructions
- Mince onion
- Chop greens into edible pieces
- Grate cheese if not yet grated
- Preheat oven to 400 F. Bring a large pot of water to a boil and salt it
- Heat wok or cast iron over medium high heat, add 4 tbsp butter, when butter is melted add onion and sauté until translucent
- Add greens and 1/2 tsp salt to pan, sauté until greens start to wilt (~3 min), put aside
- Heat milk and a bay leaf in the smallest pot over medium heat. When small bubbles appear (~5 minutes), turn off the heat
- Boil pasta until al dente but not fully cooked, drain, rinse with cool water, put in a large bowl
- Melt 3 tbsp butter in a small saucepan over medium heat.
- Add 3 tbsp flour to butter, cook until the mixture browns (~5 min)
- Remove bay leaf from the milk, slowly whisk milk into flour mixture by the quarter cup
- Add mustard (if liquid) and cheese to flour mixture, turn off heat when smooth and fully added
- Taste cheese mixture to see if salt is needed; add salt
- Add paprika, black pepper, mustard (if powder), and nutmeg to cheese mixture
- In a large bowl, toss pasta with sauce, greens
- Pour breadcrumbs into a medium bowl
- Drizzle olive oil over breadcrumbs, mix and add oil until moistened
- Mix horseradish or parmesan into breadcrumbs until fully combined
- Grease a 13x9 pan
- Pour pasta into pan, top with breadcrumbs and/ or parmesan, bake until bubbling and breadcrumbs turn brown, 25-40 minutes
