Ingredients
- 3 eggs – divided (not separated!!)
- 5 tbsp butter
- 1 cup milk
- ¼ cup clover honey
- 2 ¼ tsp (or 1 package) active dry yeast
- 2 ¾ cups all purpose flour (add more if needed, but only if)
- ½ cup cornmeal
- 2 tsp salt
- 1 tbsp water
- Take eggs and butter out to allow them to get to room temperature. In a small bowl, mix two eggs together.
- In a small saucepan, scald the milk (bring it just to the boiling point), then cool it to lukewarm (warm is fine, but keep it under 120F to avoid killing the yeast).
- In a small bowl, whisk warm milk, ¼ cup honey, and yeast.
- In a large bowl, whisk together the flour, cornmeal, and salt.
- Mix the yeast mixture, 2 tbsp butter and the two eggs into the flour mixture until it forms a soft dough. Knead the dough by hand for about 5 minutes, or until it is smooth and elastic.
- Let the dough rise in a large bowl until doubled in volume, 1-2 hours
- Once dough is almost done rising, preheat the oven to 375F, with two racks near the middle of the oven.
- Prepare two baking sheets with parchment paper.
- Once dough is done rising, divide it into 8 equal pieces.
- Shape the dough into balls and place 4 on each parchment paper (rolls will be small but will expand during rise and in the oven!).
- Cover with a bread towel or plastic wrap and let rise for 30 minutes to an hour.
- Beat final egg with 1 tbsp of water.
- Once buns finish rising, brush the tops of the buns with egg wash.
- Bake for about 17 minutes, until tops are golden brown.
- Melt remaining 3 tbsp butter.
- Take buns out of the oven and brush with butter.
- Let buns cool and serve with burgers or fake pulled pork
